Acesulfame K (acesulfame potassium) is an intense artificial sweetener, roughly 200 times sweeter than sugar, used in diet drinks, sugar-free desserts, chewing gum and tabletop sweeteners. It provides no calories and is very stable, including under heat, so it can be used in baking, and it is often blended with other sweeteners to round out the taste.
It is made by chemical synthesis. The manufacturing builds a ring structure from an acetoacetic-acid derivative combined with sulphur- and nitrogen-containing reagents, then attaches potassium to form the salt. The result is a well-defined molecule that the body does not metabolise for energy.
The sweetener is purified and crystallised into a white powder. Because the body absorbs it but does not break it down, it passes through unchanged and contributes no calories; it is often paired with sweeteners like aspartame or sucralose because the blend tastes more sugar-like and masks any slight aftertaste.
